Banana Chocolate Chip Pancakes

Here at Loganberry Inn, breakfast is a favorite time of the day! We love making these delicious Banana Chocolate Chip Pancakes and encourage you to try them out on your family or guests! The bananas, chocolate and then drizzle of pure maple syrup at the end make them a must have for any breakfast table.

Total Time: 20 Minutes
Servings: 28 pancakes

Ingredients:

  • 2 cups flour
  • 2 tbsp brown sugar
  • 3/4 tsp salt
  • 1 tbsp baking powder
  • 2 eggs
  • 1 3/4 cups milk
  • 5 tbsp butter, melted
  • 4 very ripe bananas, mashed
  • 1/2 cup chocolate chips (Ghirardelli 60% cocoa bittersweet
  • Banana slices, whipped cream, chocolate chips, and powdered sugar for garnish
  • Pure maple syrup

Instructions:

  1. In a large bowl, combine flour, brown sugar, salt, and baking powder.

  2. In medium bowl, whisk together eggs, milk, and melted butter.

  3. Stir wet mixture into the dry mixture, being careful not to over mix. Stir in bananas and chocolate chips.

  4. Heat griddle over medium heat (350 degrees). Spray griddle with cooking spray before each batch.

  5. Use 1/3 cup measuring cup to spoon batter into skillet.

  6. Cook 2 to 3 minutes on each side, or until golden brown.

  7. Garnish with banana slices, whip cream and chocolate chips. Dust with powdered sugar. Serve with maple syrup. Makes 28 pancakes.
